You will almost certainly identify this from the noise alone, and the deciding factor is not what it sounds like.
This is the comparison most people need, because the noise is usually all they have to go on before anybody looks.
Grey squirrels are diurnal — active in daylight, quiet at night. Rats are largely nocturnal. That single difference resolves the great majority of these enquiries before anything else is considered.

Knock firmly on the ceiling. Both animals will usually go quiet and resume after a minute or two, so this does not separate them — but it does separate an animal from a building, which is worth knowing before you go further.
It happens, though it is uncommon. Daylight activity in the roof and night-time activity lower down in the building is exactly what it looks like, and the two need different treatments — a trapping programme for the squirrel and a rodent treatment for the rat, in the right order and with the proofing done once.
